Gateaux de Voyage’s signature mille-feuille is made from 100% Japanese wheat flour from the famous brand Shirogane Tsuru. This wheat comes from Gunma Prefecture, where the long sunshine hours in winter and the good drainage of the soil allow the wheat to grow healthily.
Baijinhe wheat flour is the best base for making desserts. It is processed through a special flour-making process to achieve the best gluten strength of the flour. Although the price is higher, the desserts produced are amazing.
Each piece of pie crust is covered with cream and folded into 144 layers before going into the oven. Carefully selected ingredients, sophisticated baking technology and temperature control make each layer of the crust full of fragrance.
